The process we use to make our Whole Grain Rye bread brings out a slightly sweet, nutty flavor in the finished product as well as toning down the deep earthiness traditionally associated with rye bread. Since rye flour has a lower gluten content and the gluten it does have is less elastic than that of wheat, it makes for a tighter crumb. Perfect for sandwiches!
